Rich Mocha Hot Chocolate

Margaret says: "This keeps well in a thermos for those long days hiking on the moor."

Serves: 5

1 1/2 cups milk
6 oz semi-sweet chocolate (chips or squares)
1/4 cup sugar
1/8 teaspoon salt
2 cups strong hot coffee
1 cup half and half
1 teaspoon real vanilla extract
  1. Heat milk and chocolate in a saucepan until chocolate melts. Whisk until smooth (until flecks of chocolate are incorporated).
  2. Stir in sugar and salt and bring to a boil. Reduce heat and simmer for 5 minutes, stirring occasionally.
  3. Stir in coffee and half and half and briefly bring to a simmer. Add vanilla and serve immediately with slices of orange or with brandy tasting of petrol.
