Sole Almondine

3 teaspoons margarine
1/2 ounce slivered almonds
2 teaspoons flour
1/8 teaspoon salt
Dash pepper
2 Sole filets
1 teaspoon fresh lemon juice
lemon wedges and parsley sprigs
  1. In skillet heat 1 teaspoon margarine until bubbly and hot; add almonds and saute until golden. Remove almonds from skillet and set aside.
  2. In small bowl combine flour, salt, and pepper; sprinkle both sides of each filet with an equal amount of seasoned flour. In same skillet heat remaining 2 teaspoons margarine over medium heat until bubbly and hot;
  3. add fish and cook until golden brown. Carefully turn filets over and cook until other side is browned and fish flakes easily when tested with a fork; remove to a serving platter.
  4. Reduce heat to low; add lemon juice and sautied almonds to skillet and cook over low heat, stirring, until heated.
  5. Top filets with almond mixture; garnish with lemon wedges and parsley. Serves 2.
